A scribe came to Jesus early in His ministry and said, “Teacher, I will follow you wherever you go.” And Jesus said to him, “Foxes have holes, and birds of the air have nests, but the Son of Man has nowhere to lay his head” (Matthew 8:19-20).
Simple is about being uncomplicated, straightforward, unadorned, easy to understand, unsophisticated.
Simplistic is about being superficial, misleading, glossing over, overlooking important complex issues, lacking nuance.(Quora)
Despite who he was, unlike the foxes who had holes for their abode and the birds which had nests, the son of man did not have a place to lay his head, much less a home to live in. He was able to let go all his entitlement , lived a simple and uncluttered life in order to bring us close to him.
Living simply means not being complicated. Complicating matters is tantamount to creating a mountain from an ant hill. Simplicity means being contented with what you have as you trust God to take you to the level he wants you to be. It means living “simply and justly in solidarity with the poor and the marginalised and be a good neighbour” ( st Teresa of Avila). It includes doing the will of God the way he wants it done. Simplicity aims at loosening inordinate attachment to owning and having (Steve Sikkink)
